Whipped Sweet Potatoes

This yummy sweet potato mash is made all the sweeter with the addition of orange juice, brown sugar and nutmeg. Topped with marshmallows and baked, it makes a spectacular side that kids just adore.

Ingredients

  • 2 pounds sweet potato, peeled and cubed
  • 3/4 cup brown sugar
  • 2 tablespoons orange juice
  • 2 tablespoons butter, cubed
  • 1/8 teaspoon ground nutmeg
  • 1 cup miniature marshmallows

Cooking Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large saucepan cook sweet potatoes in salted water over medium-high heat for about 20 minutes, or until done. Drain, and add brown sugar, orange juice, butter and nutmeg. Whip until smooth. Spread into a medium size casserole dish and top with marshmallows.
  3. Bake in preheated oven about 10 minutes, or until marshmallows are golden brown.
