Spinach with Currants

Ingredients
- 2 packages (6 ounces each) fresh spinach
- 1 tablespoon olive oil
- ¼ cup currants
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
Cooking Instructions
- In a large pot or skillet over medium-high heat, heat oil until it shimmers.
- Add currants and spinach. Cook, stirring, 3 minutes, or until spinach is almost fully wilted. Sprinkle with salt and pepper. Stir to combine.
Substitution(s)
- Any finely chopped dried fruit (such as apricots, raisins, or cherries) can be substituted for the currants.
- Vegetable oil may be used in place of olive oil.
