Spinach with Currants

Ingredients

  • 2 packages (6 ounces each) fresh spinach
  • 1 tablespoon olive oil
  • ¼ cup currants
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Cooking Instructions

  1. In a large pot or skillet over medium-high heat, heat oil until it shimmers.
  2. Add currants and spinach. Cook, stirring, 3 minutes, or until spinach is almost fully wilted. Sprinkle with salt and pepper. Stir to combine.

Substitution(s)

  • Any finely chopped dried fruit (such as apricots, raisins, or cherries) can be substituted for the currants.
  • Vegetable oil may be used in place of olive oil.
