A south-of the border take on the traditional Sloppy Joe, this pleasantly spicy sandwich is made with seasoned ground pork rather than beef. Topped with chopped dill pickle and Swiss cheese, it's served on Portuguese rolls for a fun, ultra-casual meal.
The sandwich is versatile, too: You could substitute Monterey Jack for the Swiss, serve the filling on just about any sandwich roll, and increase the amount of spices if your family likes to bump up the heat index of their food. This sandwich can serve as a great lunch or dinner -- a meal kids will look forward to after a long day at school.
Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, chopped
- 1 1/4 pounds lean ground pork
- 2 teaspoons paprika
- 3/4 teaspoon allspice
- 1 teaspoon salt, or to taste
- Freshly ground black pepper to taste
- 2 tablespoons brown sugar
- 1 1/2 tablespoons Worcestershire sauce
- 2 tablespoons freshly squeezed lime juice
- 1 cup chicken broth
- 1 cup tomato sauce
- 4 rolls, halved (use Portuguese or any other sandwich roll)
- 4 slices Swiss cheese
- 2 large dill pickles, diced
- Tortilla chips or fruit (optional)
Equipment: large skillet
Cooking Instructions
- Heat the oil in a large skillet over medium heat. Add the onion and saute for 2 minutes. Add the garlic and saute for 1 minute. Add the pork and cook for 5 minutes, or until browned. Stir in the paprika, allspice, salt, pepper, and brown sugar.
- Stir in the Worcestershire sauce, lime juice, chicken broth, and tomato sauce. Stir well and simmer, uncovered, for 5 minutes or until hot and bubbly.
- Toast the rolls in the oven broiler or toaster. Divide the pork mixture among the bottoms of the rolls. Arrange the cheese over the pork mixture and run under the oven broiler for 30 seconds, or until melted.
- Remove the sandwiches from the broiler. Top with the diced pickle and cover with the roll tops. Serve with tortilla chips or fruit.
Substitution(s)
You can substitute lean ground turkey or lean ground beef for half the pork in this recipe.
Make-Ahead
You can prepare the meat mixture up to two days ahead of time and keep it, tightly covered, in the refrigerator until serving time.

How kids can help
Kids can measure ingredients, arrange cheese slices on the pork mixture, place tortilla chips on serving plates, and arrange the roll tops on the pork mixture.
