This rustic potato recipe makes a simple yet sensational side dish for classic main dishes and only requires a cast iron skillet to make the potatoes crisp up to golden perfection.

Ingredients

  • 2 pounds clean, scrubbed new red potatoes
  • 2 tablespoons water
  • 1 tablespoon kosher salt

Cooking Instructions

  1. Place the potatoes in the bottom of a large cast iron skillet. Add water and sprinkle with salt. Cover tightly and place over low heat. Cook for 40 to 50 minutes. Do not lift the lid during this time. Occasionally give the pan a shake.
