Simple Sweet Potato Pie

A simple pie crust plays host to a satsifyingly savory pie filling of spiced sweet potato, cinnamon and nutmeg with a flavor kick of rum that takes it from delicious to divine in just about an hour.
Ingredients
- 2 cups cooked and mashed sweet potatoes
- 2 eggs
- 1 1/4 cups evaporated milk
- 1/3 cup sugar
- 1/4 cup melted butter or margarine
- 2 tablespoons rum
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 (9 inch) unbaked purchased or homemade pie crust
Cooking Instructions
- Preheat oven to 425 degrees F (220 degrees C).
- Into food processor, put sweet potatoes, eggs, evaporated milk, sugar, butter or margarine, rum, salt, cinnamon, and nutmeg. Blend until smooth. Pour into pie crust.
- Bake for 10 minutes in preheated oven. Reduce heat to 300 degrees F (150 degrees C). Bake about 50 minutes more, or until the filling is firm.
