Simple Sweet Potato Pie

A simple pie crust plays host to a satsifyingly savory pie filling of spiced sweet potato, cinnamon and nutmeg with a flavor kick of rum that takes it from delicious to divine in just about an hour.

Ingredients

  • 2 cups cooked and mashed sweet potatoes
  • 2 eggs
  • 1 1/4 cups evaporated milk
  • 1/3 cup sugar
  • 1/4 cup melted butter or margarine
  • 2 tablespoons rum
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 (9 inch) unbaked purchased or homemade pie crust

Cooking Instructions

  1. Preheat oven to 425 degrees F (220 degrees C).
  2. Into food processor, put sweet potatoes, eggs, evaporated milk, sugar, butter or margarine, rum, salt, cinnamon, and nutmeg. Blend until smooth. Pour into pie crust.
  3. Bake for 10 minutes in preheated oven. Reduce heat to 300 degrees F (150 degrees C). Bake about 50 minutes more, or until the filling is firm.
