Sausage-Apple Stuffing

Sausage stuffing is a classic. The addition of apple adds a touch of sweetness to the mix.
Ingredients
- 2 tablespoons olive oil
- 2 onions, chopped
- 4 apples, 1/4-inch dice, divided
- 1 pound bulk sausage
- 1 1/2 teaspoons fennel seed
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 large package (14 to 16 oz.) cornbread stuffing
Cooking Instructions
- In a large pot heat oil over medium-to-high heat. Add onions and stir frequently, about 7 minutes until translucent and lightly browned. Add half the apples and cook about 3 minutes, stirring occasionally.
- Add sausage, fennel seed, salt, and pepper. Break up sausage with side of large spoon. Stirring occasionally, cook about 8 minutes or until sausage is cooked through.
- Add stuffing, butter and liquid according to stuffing manufacturer’s directions.
Substitution(s)
- 1 1/2 pounds of hot sausage links can be used in place of bulk sausage. Cook them according to manufacturer’s directions, chop coarsely, and add to stuffing with the butter.
Make-Ahead
- This can be made 2 days ahead. If you are going to stuff a turkey with it, sure to bring it to room temperature before putting it in the turkey.
Tips & Tricks
• Gala apples add a nice texture to the stuffing because unlike many other apple varieties, they soften slightly but don’t lose their shape.
