Sausage and Pepper Sub Sandwiches

Sausage and pepper subs, brimming with onions and garlic, bring to mind outdoor festivals and good times. Maybe that's why they're perfect for casual entertaining at home.

Ingredients

  • 6 hot or sweet Italian sausage links
  • 2 tablespoons oil
  • 4 bell peppers, any color, cored, seeded and sliced into 1/2-inch-wide strips
  • 2 onions, peeled and sliced 1/4-inch thick
  • 4 cloves garlic, minced
  • 2 teaspoons fennel seed (optional)
  • 1/2 teaspoon salt
  • 1/4 ground black pepper
  • 6 sub sandwich rolls, sliced in half lengthwise

Cooking Instructions

  1. Place sausage links in a large skillet with 1/2 cup water. Bring to a boil, cover, reduce heat to medium-low and cook for 20 minutes. Drain water from pan and cook links over medium heat until golden, about 10 minutes, turning to brown evenly. Remove sausage links from pan and keep warm.
  2. In the same skillet heat oil on medium high until oil shimmers. Add peppers, onions, garlic, fennel (if using), salt and pepper. Cook, stirring occasionally, about 10 minutes, or until peppers are tender and onions are translucent and may be beginning to brown.
  3. Place a sausage on each roll and divide pepper and onion mixture among the sandwiches.

Make-Ahead

Pepper and onion mixture can be made up to 3 days ahead, stored in the refrigerator and reheated before making the sandwiches.
