Salmon Cakes with Garlic Breadcrumbs

Full of omega-3 goodness, this salmon recipe is easy to execute in 15 minutes. Garlic breadcrumbs boost the flavor without much effort.
Ingredients
- 2 tablespoons olive or canola oil
- 2 cans pink salmon
- 1 teaspoon capers (optional)
- 1 tablespoon mayonnaise
- 1 egg, beaten
- 1 teaspoon lemon juice
- 4 slices garlic toast
Cooking Instructions
- Remove fish from can. Remove all bones, then mash salmon into a medium bowl with a fork to break it into smaller, flaky bits (and to be sure you removed all of the bones).
- Add the beaten egg, mayonnaise, capers, and lemon juice to the bowl. Blend well and form into flat patties (about eight). Set aside.
- To make breadcrumb coating, toast garlic bread according to package directions. Break it into smaller pieces and grind into fine breadcrumbs in a food processor.
- Dredge patties through garlic breadcrumbs to coat each side.
- Warm oil in large skillet over medium heat and cook patties until golden brown, about five minutes.
Substitution(s)
- Try using a flavored mayonnaise, such as wasabi mayonnaise, to give the salmon cakes a kick.
- Use pre-made breadcrumbs or whole wheat panko instead of garlic toast.
Tips & Tricks
If breadcrumbs come out of the food processor a bit too moist, pop them in the oven for a minute or two to dry them out.
