Rosy Applesauce

This easy-as-pie applesauce is so delicious, you won't want to wait for next Hanukkah to make it again. Its pretty pink color comes from leaving the apple peels in while the applesauce is cooking.

Ingredients

  • 8 medium red apples
  • 1/2 cup (125 mL) water or apple juice
  • 1/4 cup (50 mL) sugar (or less, to taste)

Cooking Instructions

  1. Core apples but don't peel. Cut into chunks and place in a large saucepan. Add water or apple juice and place over medium heat. Cover the saucepan and let the apples steam until soft, stirring occasionally. As they soften, mash the apple chunks with a potato masher to break them up. Continue to cook, stirring frequently until apples are cooked into a thick sauce. Total cooking time will be about 15 minutes. Taste and add sugar, if necessary.
  2. Using a food mill or a strainer, strain the applesauce by pressing through the holes to remove the peels. Serve warm or chill.
Servings: About 2-1/2 cups (625 mL) applesauce.
