Roasted Cauliflower

Ingredients

  • 2 large heads cauliflower, cut into ⅜-inch slices
  • 7 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon ground pepper

Cooking Instructions

  1. Heat oven to 450 degrees F. Lay half the cauliflower flat on a jelly roll pan. Repeat with remaining cauliflower.
  2. Brush cauliflower with half the olive oil. Sprinkle with half the salt and pepper. Turn cauliflower and repeat on other side.
  3. Roast 45 minutes, turning cauliflower once half way through roasting, or until browned.

Make-Ahead

Cauliflower can be cut ahead and kept in the refrigerator for 2 days
