- 2 large heads cauliflower, cut into ⅜-inch slices
- 7 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon ground pepper
- Heat oven to 450 degrees F. Lay half the cauliflower flat on a jelly roll pan. Repeat with remaining cauliflower.
- Brush cauliflower with half the olive oil. Sprinkle with half the salt and pepper. Turn cauliflower and repeat on other side.
- Roast 45 minutes, turning cauliflower once half way through roasting, or until browned.
Cauliflower can be cut ahead and kept in the refrigerator for 2 days
