  • ¼ cup whole milk
  • 1 tablespoon molasses
  • ½ cup natural smooth peanut butter
  • 2 tablespoons peanut oil
  • ¼ cup carob chips
  • 1 cup whole-wheat flour
  • ¼ cup rolled oats

Cooking Instructions

  1. Heat oven to 350 degrees F.
  2. In a medium bowl, whisk together the egg, milk, molasses, peanut butter and peanut oil. Stir in carob chips.
  3. In a separate bowl, combine flour and oats. Add wet mixture to the dry ingredients and stir until roughly combined. Turn dough out onto a lightly floured work surface and knead into a ball. Divide dough in two and roll each half into a log, ½-inch diameter. Wrap logs in plastic and freeze for 30 minutes.
  4. Slice each log into ½-inch disks. Spread disks evenly on a sheet pan. Bake for 15 minutes, flip and bake 10 minutes more. Transfer cookies to a rack to cool and store in an airtight container.

Make-Ahead

Bake off one of the logs and keep the other in the freezer for easy slice and bake treats.
