Got potatoes leftover? Here's a great way to use those potato leftovers for a new side dish for dinner. It's so easy and tasty, you may find yourself making extra potatoes just to have this dish again, and again, and again. Oh yes, it's also a fun breakfast food.

Ingredients

  • 1 cup leftover roasted potatoes and bacon, or other cooked potatoes: boiled, baked, mashed, or roasted
  • 1 large egg
  • 2 teaspoons butter

Cooking Instructions

  1. Mash cooked potatoes. Mix in egg to combine. In a medium skillet over medium heat melt butter.
  2. Form the potato mixture into 2 pancakes. Cook potato pancakes about 3 minutes, until golden brown and heated through. Season with salt and pepper.
