Pecan or Cashew Brittle

Ingredients

  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/8 teaspoon salt
  • 2 cups pecan halves or cashews
  • 1 teaspoon margarine or butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda

Cooking Instructions

  1. In greased 2-quart glass measure, cook sugar, corn syrup, and salt on High 2 to 3 minutes until boiling.
  2. Cook 4 minutes.
  3. Stir in nuts, butter, vanilla, and cinnamon.
  4. Cook 2 minutes.
  5. Immediately, stir in baking soda until light and foamy.
  6. Quickly pour onto greased cookie sheet; spread.
  7. Cool; break into pieces. Makes 1 pound.

CLEAN-UP TIP


After cooking the candy, always allow the glass measure to cool to room temperature before cleaning. Do not attempt to chip the hardened brittle off the glass. For easiest clean-up, fill the measure with water, then heat on High 10 minutes. Sugar will soften and wash off quickly.
