Old-Fashioned Jam Squares

Here's an excellent way to use up those odds and ends of jams and jellies we all have in the fridge. These sweet, crumbly squares taste better than the ones Grandma used to make, but don't tell her we said so.
Ingredients
- 1-1/2 cups (375 mL) all-purpose flour
- 1-1/2 cups (375 mL) quick cooking rolled oats (not instant)
- 1/2 cup (125 mL) brown sugar
- 3/4 cup (175 mL) butter
- 1-1/2 cups (375 mL) jam -- any kind you like (even a mixture)
Cooking Instructions
- Preheat the oven to 350 degrees F (180 degrees C). Grease an 8-inch (20 cm) square baking dish.
- In a medium bowl, mix together the flour, oats, and brown sugar. Using a pastry blender (or, even just a fork) blend the butter into the flour mixture, mashing it up to make a crumbly mixture. Dump about two thirds of the crumble mixture into the prepared baking dish. Press down firmly to form an even layer. Set aside the remaining crumbs.
- Spoon the jam over the crumble layer, spreading it to the edges of the pan. Cover with the remaining crumbs and press down as firmly as possible.
- Bake for 45 to 50 minutes, until it is lightly browned around the edges, and the jam has started to bubble around the sides. Let cool completely before cutting into squares.
Servings: Makes about 16 squares.
