Holiday Sugar Cookies

These pretty pastel creations add a festive touch to the holidays. Kids love decorating them with cookie stamps sprinkled with colored sugar, but if you don't have them, dipping the bottom of a glass in sugar works just fine.
Ingredients
- 3/4 cup shortening
- 1/2 cup sugar
- 1 (3 ounce) package fruit flavored gelatin mix
- 2 eggs
- 1 teaspoon vanilla extract
- 2-1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/3 cup sugar for decoration
Cooking Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, cream the shortening, sugar, and flavored gelatin. Stir in the eggs and vanilla. Sift together the flour, baking powder, and salt; stir into the creamed mixture.
- Roll cookies into 1 inch balls place them on an unprepared cookie sheet, and flatten with a cookie stamp dipped in sugar. If you don 't have a cookie stamp, flatten cookies with the bottom of a glass dipped in sugar. Bake for 6 to 8 minutes , until set but not brown.
