Harvest-Onion Marmalade

Think of this as your go-with-everything addition to any meat or poultry. It also makes a fun addition to a salad, sandwich, or a mix-in for potatoes. Just let your imagination rule!

Ingredients

  • 1/2 cup butter
  • 5 pounds yellow onions, chopped
  • 2 pounds leeks, whites thinly sliced
  • 2 shallots, finely chopped
  • 1/2 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper

Cooking Instructions

  1. Melt butter in large pot over medium high heat. Add onions, leeks, shallots, brown sugar, and balsamic vinegar, stirring to combine. Cook uncovered about 40 minutes, stirring about every 5 minutes, or until softened and reduced in volume.
  2. Reduce heat to medium low. Add salt, pepper, and cover. Continue to cook 30 minutes more, stirring about every 5 minutes.

Substitution(s)

  • Chopped, frozen onions may be substituted for whole fresh onions.

Make-Ahead

  • This can be made ahead and stored for up to 3 days in the refrigerator.
