Ellie's Easy Tomato Sauce

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped (about 1-1/2 cups)
  • 2 cloves garlic, minced (about 2 teaspoons)
  • Two 28-ounce cans whole tomatoes, drained and the tomatoes chopped
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • Salt and freshly ground black pepper to taste

Cooking Instructions

In a large saucepan, heat the oil over medium heat. Add the onion and cook, stirring a few times, until softened, about 5 minutes. Add the garlic and cook for 1 minute more. Add the remaining ingredients and cook, uncovered, stirring occasionally, until thickened, about 30 minutes. Season with salt and pepper.
