Crusted Salmon with Mustard Dinner
Salmon with a flavorful mustard-crumb crust along side of orange-scented rice, and spinach with garlic, makes a great dinner, fast. Colorful, quick, and complete. What more can you ask of a weeknight dinner?
How to Do it in 15 Minutes:
- Heat the broiler
- Prep and cook the rice
- Prep and cook the salmon while the rice is cooking
- Prep and cook the spinach while the salmon is cooking
Slice pitas in half to make two circles. Brush them with butter, sprinkle with sugar and broil until toasted. Let cool a minute then spread with orange marmalade and chopped crystalized ginger or crushed gingersnaps.
