Cranberry-Filled Stuffing Patties

These patties are a delicious side dish that can be whipped up any day of the week, or they can be a great way to use up your Thanksgiving leftovers.
Ingredients
- 1/4 cup olive oil
- 1/2 onion, finely chopped
- 3 stalks celery, finely chopped
- 2 medium carrots, finely chopped
- 2 tablespoons poultry seasoning
- 1 15-oz. package seasoned stuffing bread cubes
- 3 cups chicken stock
- 3 large eggs, beaten
- salt and pepper to taste
- 1/2 of a 16-oz. can whole cranberry sauce
Cooking Instructions
- Preheat oven to 375 degrees.
- Heat 2 tablespoons of olive oil in a large non-stick skillet. Cook onion, celery, and carrots until soft, approximately 8 minutes. Stir in poultry seasoning and set aside.
- Place bread cubes in a large bowl along with onion, carrot, and celery mixture. Add beaten eggs and chicken stock and combine with your hands. Mush the mixture until it’s moist enough to hold together in a patty form.
- Refrigerate mixture for about 10 minutes. Take about 3/4-cup of mixture and form into a patty shape. Make a small indent in the center of the patty and place approximately 1 1/2 teaspoons of cranberry sauce into the patty. Form the bread mixture around the cranberry sauce to seal the sauce in the middle of the patty. Repeat until you have 8 cranberry-filled patties.
- Heat the remaining olive oil in a large non-stick skillet and fry each patty until they are golden brown, approximately 3 minutes on each side.
- Place the patties on a baking sheet lined with aluminum foil and bake for 15 minutes. Serve hot.
Substitution(s)
- Toss in some nuts or raisins to add some extra pizzazz to your stuffing.
- Substitute the cranberry sauce with orange marmalade for a zesty twist.
