Ingredients
- 1 tablespoon butter
- 1 small onion, chopped
- 1 cup cooked potatoes and bacon, smashed
- ½ cup corned beef, shredded or chopped
Cooking Instructions
- In medium skillet melt butter over medium heat. Add onion and cook about 4 minutes, stirring occasionally, or until transluscent.
- Add potatoes and corned beef and cook 3 minutes, or until heated through. Season with salt and pepper.
Substitution(s)
- Any type of cooked potatoes can be used: mashed, roasted, baked, or boiled
