Ingredients

  • 1 tablespoon butter
  • 1 small onion, chopped
  • 1 cup cooked potatoes and bacon, smashed
  • ½ cup corned beef, shredded or chopped

 

Cooking Instructions

  1. In medium skillet melt butter over medium heat. Add onion and cook about 4 minutes, stirring occasionally, or until transluscent.
  2. Add potatoes and corned beef and cook 3 minutes, or until heated through. Season with salt and pepper.

 

Substitution(s)

  • Any type of cooked potatoes can be used: mashed, roasted, baked, or boiled
