Chocolate-Cherry & Marshmallow Cookies

Ingredients

 

  • ½ cup unsalted butter
  • 1 ounce unsweetened chocolate
  • ½ cup brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ⅛ teaspoon salt
  • ½ cup miniature chocolate chips
  • 12 large marshmallows, cut in half horizontally
  • 12 glacé cherries, cut in half vertically

Cooking Instructions

 

  1. Heat oven to 350 degrees F. In a large microwavable bowl melt butter and chocolate on high 1 minute. Stir. If not totally melted, continue to microwave in 30 second intervals until melted. Stir to combine.
  2. Add egg yolk and vanilla, mix until combined.
  3. Add flour and salt. Mix until combined, scraping down side of bowl occasionally. Add chocolate chips. Mix until combined.
  4. By tablespoon, roll dough into circles and place on ungreased cookie sheet 2 inches apart. Flatten with bottom of glass to diameter of about 2¼ inches.
  5. Bake 11-13 minutes or until set. Remove from oven and place on cooling rack. Place oven rack 6-inches from heating element. Turn oven to broil.
  6. Place a marshmallow half, cut-side down, on each cookie. Broil 1-2  minutes until lightly toasted and colored. Remove cookies with done marshmallows as needed from beneath the broiler and move to cooling rack to cool completely.
  7. Place a cherry, cut side down, on each marshmallow.

 

Substitution(s)

Dark brown sugar can be substituted for the light brown sugar.

Make-Ahead

 

The cookies can be made through baking without the marshmallow, wrapped well, and stored in the freezer up to 6 months.
